I’m a highly professional and innovative individual with over 28 years of extensive experience related to five star deluxe Hotels, fine dinning restaurants, brasserie and volume catering. I possess excellent team-building, leadership and organizational skills with the ability to train, manage and motivate multi-national teams of skilled and semi-skilled staff, with continuous desire to improve craft as professional chef, always striving to achieve excellence.
I have gained wide experience working in 5-star hotels, as well working for Michelin stars restaurants.
Most interested to handle positions with managerial responsibilities that will afford opportunities for learning and advancement.
I have mastered multi-outlets and high-volume operations. Self-confident and highly motivated with strong organizational skills, I have mastered from menu planning to cost control, people management, food safety up to menu design and implementation in all the positions I held.

Mediterranean, Fusion Mediterranean, mastering beef, fish, pasta, seafood, dishes. As Sicilian, I have reinterpreted the culinary of the zone.
